Lori and Bill Malmaut have been working on refitting the one-time Briken's Ice Cream shop on Route 206 into a new Stewart's Root Beer franchise for months.
It's been a slow process, made difficult by the fact the building has been vacant for several years—but fans of the flavorful root beer and hamburgers shouldn't have to wait too much longer.
"We're trying for Aug. 1," Lori Malmaut said this week.
The restaurant is seeking experienced servers and cooks to staff the new restaurant (Call 908-256-1249 if you are a cook or experienced food server), which promises to quickly become a Hillsborough favorite.
The Malmauts had hoped to open in the spring, and a sign in the window promised the restaurant was "Coming soon."
Lori Malmaut said they've been hearing from anxious customers looking forward to the fast food made the way it was in the '60s.
"Everybody's been saying (they can't wait for the opening)—we've been working hard on it," she added.
